The cultivation of lemons already introduced during the 10th century, the production of hand made pasta, considered the best in the hole reign, were the most profitable activities. The lemon trade is still today a very profitable activity, the variety of lemons called ‘Sfusato Amalfitano’ is partially exported and partially used to make the famous liquor ‘Limoncello’ of the Amalfi Coast.
The industry of hand made pasta was most flourishing till the past few decades, is now a tradition kept by the housewives. The famous ‘ricci’ from Minori, the ‘scialatielli’ and the ‘ndunderi’ are cooked according to ancient recipes, mainly during the local festivals and important occasions, and are traditions of a past that signs the history of a community.
